Summary of the Role
Carnbrooke is a family-owned business who currently operate a modern 2500 sq. ft Butchery & Food Hall retail business in Lisburn and a retail store in Dromore. Our state-of-the-art facilities including kitchen and factory production are based in Lisburn. Due to continued expansion and new customers, we are looking for a Butcher to join our growing business. You will be an essential part of the butchery team and have a great passion for the trade
The role of Butcher is to cut, trim and prepare meats according to order requirements, using knives, butcher’s cutlery and powered equipment. You will perform a variety of tasks related to the efficient operations of the meat department.
Main Duties:
- Demonstrate strong butchery knowledge and knife skills.
- Receive, inspect, and store meat upon delivery.
- Maintain a safe food environment, complying with health and safety regulations, internal & external audit requirements.
- Follow all rotation procedures to ensure freshness.
- Maintains correct and legible prices on all items.
- Cleaning and sanitation, including, but not limited to mopping and sweeping floors, wiping down prep area, wiping down walls, racks, cooler, and washing knives & utensils.
- Cooperates and communicates with all colleagues to promote teamwork.
- Maintains a safe work environment.
- Mentor others in the performance of their job duties.
- Communicates effectively with all contacts including colleagues, customers and suppliers.
- Undertake any other duties, as considered by Management to be within scope of role.
- New developments and changes to customer requirements mean that processes and their associated tasks and functions do not remain static. In order to remain flexible, responsive and competitive, Carnbrooke Meats reserves the right to adapt roles and responsibilities in response to operational changes and there is a reasonable expectation of adaptation to new or modified working methods as required.
Working Environment
The role will entail moderate demanding physical activity and can be repetitive. Requires lifting heavy carcasses or boxes of meat supplies up to 50 pounds. You can be standing/or walking for more than 4 hours per day.
You will have some exposure to hazards or physical risks, which require you to follow basic safety requirements when using any knives, equipment or machinery. The work will involve elements such as cold temperatures.
Person Specification
The ideal candidate will have/be:
- Qualified Butcher
- Manual dexterity for the use of sharp knives and meat cutting equipment
- Able to take instruction, is willing to work as part of a team and to tight deadlines
- The willingness to comply with the high standards of hygiene
- An ability to work under pressure
- Confident communicator and ability to work as part of a team
- You must be able to communicate fluently in English (spoken and written) with customers and other staff and must be willing to undertake the appropriate training supplied by the company.
- A courteous and helpful manner, with an enthusiasm for customer service
- Flexibility and positive attitude to work evenings, weekends and within the various sections of the store.
