It is important to keep in mind, that everyone likes their beef cooked differently.

  1. Beef should be seasoned well with salt, cracked black pepper, rosemary or thyme.
  2. Place and roughly cut an onion or carrot underneath your beef whilst it is roasting, as this will enhance your gravy flavour for later in the day.
  3. The secret of cooking beef is in allowing all meat to rest once you have taken it out of the oven. This gives the remaining muscle time to relax and therefore becoming a more tender piece of meat.

Rib Roast Cooking Tips

  1. Let it rest when out of the oven for at least 15 minutes, this will improve juiciness and texture
  2. Massage seasonings (we suggest simple, fresh flavours such as fresh garlic, rosemary leaves, sea salt and cracked black pepper) all over the roast to form a thin ‘crust’
  3. After seasoning your roast, let it come to room temperature, about 2 hours, before placing it in the oven. This helps the roast cook evenly.
  4. Preferably season your roast the day before and leave uncovered overnight in the fridge.
