The main point to be aware of is the difference in the fat content. The monosaturated marbling melts much quicker than usual saturated steak fat. Therefore, it must be kept in mind not to lose the marbling, resulting in a loss of that extra tenderness and flavour. Wagyu therefore best lends itself to be cooked to no more than a medium level of doneness. Yet our experts and chefs would suggest to each Wagyu to be eaten rare or medium-rare. It is also a good idea to let it sit at room temperature no longer than 15-20 minutes, before cooking.
