The flavour is really deep and beefy, the fat just rolls away and brings in unctuousness, there is no hint of liveriness. One judge said he couldn't stop eating it.

A beautiful, stunning joint of beef with excellent fat and a rich aroma – the flavour of the top cap has some deeply mature notes of almost sour richness. The eye of the meat is less so – just rich, deeply beefy and tender as it comes. The whole impression is one of quality beef, reared well, treated well, aged well and butchered well. Simply delicious.
